T&T Organics has been formed as a West Virginia-based Limited Liability Company, located in McDowell County, West Virginia. T&T Organics is diligently working to establish itself as a leading provider of quality organic products to support the growing demand.
Why Goat Meat?
Goat meat is the most nutritious of the red meats (see chart below). Far leaner than beef, it is excellent for maintaining healthy weight and supports healthy cholesterol levels. Goat meat is naturally lean, meaning it is much lower in saturated fat and cholesterol, having a naturally higher HDL count (the good cholesterol) and a naturally low LDL count (the bad kind of cholesterol). It is also lower in calories than other meats. Since the molecular structure of goat meat is different than that of beef or chicken, it is easier to digest. 70% of the world's population is very familiar with goat meat and prefers it to all other red meats.

T&T Organics will also provide organically fed, free range chickens and eggs to our customers. A new study of chicken farms confirms a long-suspected benefit of organic agriculture: it fights the spread of antibiotic-resistant bacteria. For years, scientists have had a hunch that the widespread use of antibiotics on livestock encouraged naturally-occurring microbes to develop resistance to drugs. But antibiotics are so common on American farms that their hypothesis was hard to test.
The new study, headed by Amy Sapkota of the University of Maryland and published in Environmental Health Perspectives, tested the microbes present in 10 conventional chicken farms and 10 chicken farms that had recently gone organic. Organic standards do not allow the use of preventative antibiotics in animals, so if the researchers' hypothesis was right, they would find lower levels of drug resistance in the bacteria there.
The researchers findings were definitive. A much smaller percentage of the bacteria at the organic farms had antibiotic resistance -- indicating that the use of antibiotics in animals encourages the spread of drug resistant bacteria. Non-therapeutic antibiotics are banned at livestock farms in most of Europe; could American regulators follow suit? This study is the latest in a string of studies finding that organic agriculture supports good health. The meat industry, though, continues to dispute the link between its use of antibiotics and the growth of drug-resistant bacteria. And low doses of antibiotics allow industrial livestock farmers to cram more animals into a smaller space and have them grow faster.
Not All Eggs are Created Equal
In addition to poultry meat products, T&T Organics is also committed to providing customers with the highest quality eggs. Eggs are also an incredible source of high-quality protein and fat—nutrients that many are deficient in. And it is of our belief that eggs are a nearly an ideal fuel source for most of us.
However, there are two caveats:
- Free-range or “pastured” organic eggs are far superior when it comes to nutrient content
- Cooking destroys many of these nutrients, so ideally, you’ll want to consume your eggs raw (but ONLY if they’re pastured organic, as conventionally-raised eggs are far more likely to be contaminated with disease-causing bacteria such as salmonella)
An egg is considered organic if the chicken was only fed organic food, which means it will not have accumulated high levels of pesticides from the grains (mostly Genetically Modified corn) fed to typical chickens.
Additionally, testing has confirmed that true free-range eggs are far more nutritious than commercially raised eggs. In a 2007 egg-testing project, Mother Earth News compared the official U.S. Department of Agriculture (USDA) nutrient data for commercial eggs with eggs from hens raised on pasture and found that the latter typically contains:
- 1/3 less cholesterol
- 1/4 less saturated fat
- 2/3 more vitamin A
- 2 times more omega-3 fatty acids
- 3 times more vitamin E
- 7 times more beta carotene
The dramatically superior nutrient levels are most likely the result of the differences in diet between free ranging, pastured hens and commercially farmed hens. Organic Fresh Produce
Another staple on the list of products provided by T&T Organics will be our variety of fresh produce products grown organically without the use of genetically modified seeds. All garden products will be produced using some of the oldest heirloom seed products available. Food is considered organic if it comes from a farming system that avoids man-made fertilizers, pesticides and growth regulators. Instead, T&T Organics relies on basic crop rotation, using animal and plant manures, and hand weeding to grow our products.
One of the greatest non-scientific benefits to farmers for providing organic foods is the guilt-free pleasure associated with the experience of truly making a difference in the communities we serve. It is reassuring to know that, by growing organically, we're not only helping the environment but we're providing customers with good, wholesome food that’s fresh and preservative free.
